  • Campania Buffalo Mozzarella PDO is made with fresh raw, heat-treated or pasteurized whole buffalo milk.
  • The milk comes from buffaloes bred in the PDO area, by strictly observing all breeding and buffalo genetics rules.
  • Once the milk is collected, it is delivered to the factory and transformed within 60 hours (according to the PDO disciplinary).
  • The process also entails the use of natural whey culture to curdle the milk.
  • Campania Buffalo Mozzarella PDO must observe the standard shape, look and weight.
