Fattorie Garofalo Campania Knot-Shaped Buffalo Mozzarella PDO are small spun curd cheeses.
These delicacies have all the characteristics of Campania buffalo mozzarella – including the rounded shape – but smaller.
They are Campania bite-sized buffalo mozzarella PDO:
- Our bite-sized buffalo mozzarella PDO is made with fresh raw, heat-treated or pasteurized whole buffalo milk.
- The milk comes from buffaloes bred in the PDO area, by strictly observing all breeding and buffalo genetics rules.
- Once the milk is collected, it is delivered to the factory and transformed within 60 hours.
- The process also entails the use of natural whey culture to curdle the milk.
- Mozzarella must observe the standard shape, look and weight.
